Suntory Toki is a blended Japanese whisky drawing on three Suntory distilleries — Yamazaki (malt, founded 1923), Hakushu (malt, founded 1973 in the Japanese Alps) and Chita (grain, since 1972). Blended in a 'reverse' style that gives grain whisky equal footing with malt. 'Toki' means 'time' in Japanese.
Mood: Bright, precise, highball.
"Built for the Japanese highball — two-thirds soda, a lot of ice, one long lemon peel. Also fine neat, but the highball is why it exists."
Tasting notes
Nose of basil, green apple and honey. Palate of grapefruit, green grapes, peppermint and thyme. Subtly sweet and spicy finish with vanilla oak, white pepper and ginger.
Food pairing
Sushi, yakitori, lightly grilled fish, or a Japanese highball on its own.
