Shiloh's winemaker's blend - Cabernet-led with Syrah, Cab Franc, and Carignan, the bottle that drinks like a flagship at a midweek price.
Mood: The friend who keeps a wine cellar but is happy to crack the right bottle on Tuesday. The Shabbos dinner where you want serious wine without ceremony.
Our sommelier says
Deep ruby-purple. Cabernet Sauvignon leads on the nose - blackcurrant, dark cherry, cedar - with Syrah's pepper, Cab Franc's leafy graphite, and Carignan's savory mid-palate filling out the picture. Full-bodied, fruit-driven, with rounded tannin already integrated from six months in French oak. Drinks well now without a decant. The four-way blend gives it more dimension than a varietal at the same price point.
Tasting notes
Blackcurrant, dark cherry, cedar, black pepper, leafy graphite. Full body, rounded tannin, fruit-led, savory mid-palate. Long, composed, gentle spice.
Food pairing
Ribeye, lamb chops, beef brisket, roast chicken with herbs, hard cheese (after the wait).
