Syrah, Petite Sirah and Mourvedre make up this southern French varietal trio, run on Judean Hills limestone. It is aromatic and dense.
Mood: The Rhone drinker who hasn't tried a serious Israeli blend. The bottle the winery uses to show the warm-Mediterranean side of its range.
Our sommelier says
The color is deep purple and nearly opaque. The nose is assertive and layered, with black pepper, black fruit, dried flowers, dark chocolate, and a stony mineral note that comes from the limestone hilltop. Syrah is in the lead, the dense body comes from Petite Sirah, and Mourvedre puts savory game underneath. It is compact and full-bodied, the tannin is fine-grained, and the mid-palate has the sort of weight that asks for meat on the table. Give it thirty minutes in a decanter. It will hold five-plus years in the cellar.
Tasting notes
Black pepper and black fruit, with dried flowers, dark chocolate and mineral. Compact and full in body, with a dense mid-palate and fine-grained tannin. Peppery and long, with a mineral echo.
Food pairing
Grilled merguez, lamb shoulder, ribeye, slow-braised beef, or hard cheese (after the wait).
