A southern French varietal trio - Syrah, Petite Sirah, Mourvedre - run on Judean Hills limestone, dense and aromatic.
Mood: The Rhone drinker who hasn't tried a serious Israeli blend. The bottle the winery uses to show the warm-Mediterranean side of its range.
Our sommelier says
Deep purple, nearly opaque. The nose is layered and assertive - black fruit, black pepper, dark chocolate, dried flowers, a stony mineral note from the limestone hilltop. Syrah leads, Petite Sirah adds the dense body, Mourvedre brings the savory game underneath. Full-bodied, compact, with fine-grained tannin and the kind of mid-palate weight that wants meat on the table. Decant thirty minutes; will hold in the cellar five-plus years.
Tasting notes
Black fruit, black pepper, dark chocolate, dried flowers, mineral. Full body, compact, fine-grained tannin, dense mid-palate. Long, peppery, mineral echo.
Food pairing
Lamb shoulder, grilled merguez, ribeye, slow-braised beef, hard cheese (after the wait).
