This is the flagship of Hayotzer. The Auteur label, French for 'author', bears the silhouette of Philippe Lichtenstein, and the wine is selected Galilee Cabernet with fourteen months of oak ageing.
Mood: The cellar bottle. The Yom Tov seudah where the host wants the top-shelf Hayotzer label, not the everyday one.
Our sommelier says
The color is deep purple. A dense, lifted nose gives ripe blueberry and blackcurrant with sweet spice from French oak, the warm-southern signature Lichtenstein brings to the Auteur line. Kerem Ben Zimra, at 860 meters in the northern Galilee, supplies the fruit, which is why the alcohol stays composed even with a full body. Fourteen months in barrel leave firm, structured tannin, and the finish is long and layered. It has a decade of aging potential. For drinking now, decant it for an hour.
Tasting notes
Blackcurrant, ripe blueberry, soft vanilla, sweet spice. Full in body with a dense fruit core, firm structured tannin, and an oak frame. Layered, long, and age-worthy.
Food pairing
Serve with standing rib roast, lamb shoulder, slow-braised short ribs, or aged hard cheese (after the wait), or at a Yom Tov seudah.
