Flam's flagship - a Bordeaux-style blend led by Cabernet Sauvignon, eighteen-ish months in French oak, the bottle the winery hangs its name on.
Mood: The serious cellar pick. The anniversary dinner. The guest who follows Israeli wine seriously and wants to see what Flam's prestige bottling does.
Our sommelier says
Deep ruby-purple, dense in the glass. The nose is layered and composed - blackcurrant and dark berry over cedar, graphite, a wisp of Syrah pepper and Petit Verdot violet. Cabernet Sauvignon leads on structure, Merlot rounds the mid-palate, Cab Franc and Petit Verdot add the leafy graphite lift, Syrah brings the warm-spice signature. Full-bodied with the kind of fine-grained tannin that sets the wine up for a decade in the cellar. French oak fully absorbed. Long, layered, mineral finish. Decant an hour for current drinking.
Tasting notes
Blackcurrant, dark berry, cedar, graphite, black pepper, violet. Full body, fine-grained tannin, dense fruit core, oak-integrated. Long, layered, mineral, age-worthy.
Food pairing
Standing rib roast, lamb shoulder, slow-braised short ribs, aged hard cheese (after the wait), Yom Tov seudah.
