Empress 1908 Gin is the stunning color-changing gin from Victoria Distillers on Vancouver Island, a collaboration with the Fairmont Empress Hotel. Butterfly pea flower gives it deep indigo blue that turns lavender-pink when citrus or tonic touches the glass.

Tasting notes
Deep indigo pouring, transitioning to lavender-pink with citrus. Aromas of juniper, rose petal, coriander, grapefruit peel, and a warm cinnamon note. The palate is smooth, with juniper, floral rose, cardamom warmth, and a citrus finish.
Best served
Gin and tonic to see the color shift, French 75, negroni, or an elderflower gin sour. A cocktail-hour showstopper at a bar mitzvah or engagement l'chaim.
