This is the kosher cuvee from Chateau Giscours, a Margaux 3rd Growth grown on the Left Bank gravels. It is led by Cabernet and comes from the appellation that defined perfumed Bordeaux.
Mood: The cellar bottle that doesn't come out twice a year. The classed-growth Bordeaux that earns its place on the Yom Tov first night.
Our sommelier says
The color is deep ruby, with garnet at the rim. This is the nose of Margaux at its most recognizable: violet, blackcurrant, cedar, graphite, and a wisp of pipe tobacco. The structural spine is led by Cabernet Sauvignon, and Merlot rounds out the mid-palate. Cabernet Franc and Petit Verdot bring the dark color and perfumed lift that the Margaux gravels are known for. It is full-bodied and finely tannic, and the French oak is fully absorbed. The finish is long, layered, and perfumed. For drinking now, decant it for an hour. It is built to age a decade-plus.
Tasting notes
Blackcurrant, violet, graphite, cedar, pipe tobacco. Full in body with a dense fruit core, fine structured tannin, and a perfumed lift. Layered, long, perfumed, and age-worthy.
Food pairing
Serve with standing rib roast, lamb chops, slow-braised short ribs, or aged hard cheese (after the wait), or at a Yom Tov seudah.
