Carmel Limited Edition (750ml)

Carmel Limited Edition is the flagship red of the winery. It is a Bordeaux blend in an old-world style, with fruit from the high-altitude Kayoumi vineyards in the Upper Galilee. Carmel builds around this benchmark bottle.

Mood: Structured, serious, benchmark.

Tasting notes

The nose has blackcurrant, dark plum, and violet, and the oak adds cedar, graphite, and Mediterranean herb. It is layered and full-bodied. Dark cassis fruit comes first, followed by fine cedar tannin, tobacco leaf, and a lifting minerality through the mid-palate. The finish is long and polished, with grippy tannin and dark chocolate that lingers.

Food pairing

It is made for slow-braised short rib, entrecôte, aged hard cheeses, and standing rib on Yom Tov. Before Shabbos, let it sit in a decanter for 30 minutes.
