Binyamina The Cave Old Vines - (750ml)

This is the old-vines expression of the Cave series from Binyamina. The fruit is drawn from the Upper Galilee parcels with the deepest root systems and lowest yields. It comes in a wooden gift box, and it is vegan-friendly.

Mood: Concentrated, brooding, gift-worthy.

Tasting notes

The nose is rich, with blackberry, ripe plum, and black cherry over an earthy floor of forest and clove. On the palate it is full and layered, with sweet oak, tar, and bright acid framing powerful, well-integrated tannin. The finish is long and caressing, and it hints at another decade of cellar potential.

Food pairing

It goes with dry-aged ribeye, lamb shoulder, and slow-cooked short rib. It holds up to a cholent on Shabbos night, and a 30-minute decant is rewarded.
