Aura di Valerie Amarone della Valpolicella (750ml)
- In stock
- Kosher for Passover
Among the very first kosher Amarones, Aura di Valerie Amarone della Valpolicella comes from Italy's classic Valpolicella DOCG and is made from partially dried Corvina, Rondinella, and Molinara grapes. For months the grapes rest on wooden racks, which concentrates everything. Slow fermentation and long oak aging follow.
Mood: Concentrated, Italian, cellar.
Sommelier's note
"This is a real kosher Amarone, with dried cherry, cocoa, fig, a whisper of raisin, warm alcohol, and Italian earth. Pour it with a serious yom tov main course, or straight in a big glass alongside hard cheese."
Tasting notes
It is a deep, opaque garnet, and the aromas bring dried cherry, prune, fig, cocoa, raisin, and dried herb. The palate is full-bodied and dry (though technically off-dry from the appassimento richness), showing black cherry compote, espresso, cocoa, and a warm high-alcohol lift. The finish runs very long and warm, with dried-fruit sweetness.
Food pairing
Pair it with slow-braised short rib, wagyu brisket, Osso Bucco, dark chocolate desserts, or aged hard cheeses such as Parmigiano or aged Manchego. This is a serious bottle for yom tov or a milestone.
