For big Islay peat, Ardbeg Ten is the benchmark. It is non-chill-filtered, bottled at 46%, and matured entirely in ex-bourbon barrels, with no sherry, no finishing, and no makeup. What you get is smoke, sea, and citrus, just as Kildalton built it.

Our sommelier says

This is the Committee's flagship. It is peated to roughly 55 ppm at malting and then aged a decade in first- and second-fill American oak. The bourbon casks keep it pale and lemony, and the peat reek does the heavy lifting.

Tasting notes

First come tar rope, lemon peel, espresso, and brine, with a quick flash of vanilla custard. Then black pepper, charred pineapple, smoked sea salt, dark chocolate, and kippers over a beach fire. The finish is enormous and lingering, with creosote, lime cordial, and a coal-smoke warmth that refuses to fade.

Food pairing

With dark chocolate, smoked bluefish, or a thick ribeye. Or simply by itself beside a fire.
