Tzora's flagship - a Cabernet-Syrah blend from the stony slopes of the Shoresh vineyard, named for the morning mists that climb the Judean Hills.
Mood: The cellar bottle. The serious Israeli wine drinker who already knows Domaine de Tzora. The anniversary dinner.
Our sommelier says
Deep ruby-purple. The nose is complex and layered - black cherry, blackcurrant, dried herb, graphite, a mineral lift that says this fruit grew on real stone. Cabernet Sauvignon leads on structure, Syrah adds peppery depth and rounded mid-palate. Full-bodied, finely tannic, with the precision that's made Tzora the reference point for Judean Hills terroir wine. French oak is fully absorbed. Long, layered finish. Built to drink with serious food now and to hold a decade.
Tasting notes
Black cherry, blackcurrant, dried herb, graphite, mineral lift. Full body, fine tannin, dense fruit core, oak-integrated. Long, layered, mineral, age-worthy.
Food pairing
Standing rib roast, lamb shoulder, slow-braised short ribs, aged hard cheese (after the wait), Yom Tov seudah.
