The Sexton is a triple-distilled Irish single malt from Old Bushmills country. Its blender is Alex Thomas, one of the few female master blenders in Irish whiskey. It is made from 100% Irish malted barley, aged four years in European oak ex-sherry butts, and presented in a matte-black hexagonal bottle.
Mood: Dark, smooth, dram-ready.
Bartender's note
"This single malt wears a sherry cloak, with dried fruit, honey, and a chocolate finish. It is approachable neat, with an ice sphere, or as the base of an Old Fashioned that leans festive."
Tasting notes
The nose shows dried fruit, honeycomb, dark chocolate, and toasted almond. Smooth and medium-full on the palate, it has sherry-sweetness, raisin, orange peel, and a nutty depth that comes from the ex-sherry oak. The finish is long and warming, and chocolate and toasted spice linger.
Best served
Drink it neat in a Glencairn, over one large ice cube, or with a splash of water to open the fruit. It also builds a serious sherry-forward Old Fashioned, or a hot toddy for the winter Shabbos table.
