Among Georgia's indigenous white grapes, Tsolikouri is one of the oldest, and it has been at home in the vineyards of Imereti and Kakheti for centuries. Shimon & Company is the only kosher winery in Georgia. Its Premium Dry White is a bright, food-friendly pour that carries the grape's floral and mineral character to the Shabbos table.

Tasting Notes
The nose brings green apple, quince, and white flowers, plus hints of honey and fresh herbs. Dry and mineral-driven on the palate, it shows citrus zest and pear over a stony backbone. A crisp, lingering finish ends on subtle almond and hay.
Food Pairing
It is a natural at Shabbos lunch, next to grilled fish, gefilte fish with a bright horseradish, roast chicken, or dairy meals with soft cheeses and salads. If you can source kosher versions, Georgian khinkali dumplings are an excellent match too.
