Shiloh's mevushal flagship - a dense three-varietal blend from the Shomron, fifteen months in French and American oak.
Mood: The simcha where you need a serious bottle that also pours through the waiter's hand. The host who refuses to compromise on quality just because it's mevushal.
Our sommelier says
Deep purple. The nose is dense and dark - blackberry, plum, baking spice, a smoky char from time in barrel. Petite Sirah leads on body and color, Petit Verdot adds the leafy graphite lift, Shiraz brings the peppery warmth. Full-bodied with substantial tannin that's softened by the mevushal heating without losing structure. Fifteen months in equal French and American oak (mostly second-use) leave spice in the finish, not wood. A serious mevushal red that drinks like an estate bottling.
Tasting notes
Blackberry, plum, baking spice, black pepper, smoky oak. Full body, substantial tannin, dark fruit core, spicy oak frame. Long, peppery, smoky.
Food pairing
Standing rib roast, lamb shoulder, brisket, grilled merguez, hard cheese (after the wait), Yom Tov seudah.
