Recanati's single-vineyard reserve Cabernet from David's Vineyard in the cool slopes of the Upper Galilee - fifteen months in French oak, built to age a decade.
Mood: The cellar bottle that gets bought by the case. The Yom Tov first night. The serious wine drinker who already knows Recanati's range.
Our sommelier says
Deep ruby-purple. The nose is layered and composed - ripe black cherry, lavender, clove, the cigar-box note that says serious Cabernet, finished by a mineral lift from the Galilee slopes. The palate is full-bodied and structured, with the firm tannin and dense fruit a single-vineyard Cab should have, fifteen months in French oak adding spice and roundness without burying anything. The finish is long and mineral. Decant an hour for current drinking; built to hold ten years.
Tasting notes
Ripe black cherry, lavender, clove, cigar box, mineral lift. Full body, firm structured tannin, dense fruit core, oak-integrated. Long, mineral, age-worthy.
Food pairing
Standing rib roast, lamb shoulder, slow-braised short ribs, aged hard cheese (after the wait), Yom Tov seudah.
