Odem Mountain is on the northern Golan at over 1,000 meters, where the fruit ripens slowly thanks to cold nights and volcanic basalt soil. The Volcanic Merlot leans into that mountain character, with plush black-fruit weight braced by cool-climate freshness.

Tasting notes

Ripe plum, black cherry, and cocoa, lifted by wet stone. It is medium- to full-bodied, with velvety dark fruit, gentle oak spice, and a firm mineral backbone. The finish lingers smoothly, with soft tannin and a savory volcanic edge.

At the Shabbos table it is a natural next to brisket, slow-braised short ribs, or roast chicken. A hearty mushroom kugel is a lovely match too.
