Our sommelier says
Deep purple, nearly opaque. The nose leads with cassis and spicy plum, layered with smoke, black pepper, and the soft vanillin signature of two years in new barrels. Non-filtered, so the palate is dense and textured - full body, fine tannin, dark fruit and savory spice in even balance. The high-elevation Hevron fruit keeps the alcohol composed despite the ripeness. Decant thirty minutes; built for serious food and a few more years in the cellar.
Tasting notes
Cassis, spicy plum, black pepper, smoke, soft vanilla. Full body, dense, fine tannin, dark fruit core, savory spice. Long, smoky, composed.
Food pairing
Standing rib roast, lamb shoulder, slow-braised short ribs, the Yom Tov seudah that deserves the reserve bottle.
