This is the varietal Cabernet Franc from Hevron Heights. The fruit is from the Judean mountains, where Mediterranean breezes cool it gently, and Michel Murciano gives it eighteen months in oak.

Mood: The guest who already drinks serious Israeli reds and wants the less-obvious grape. The Shabbos table that wants Cabernet's sibling, not Cabernet.

Our sommelier says
The color is deep ruby-purple. On the nose it is classic Cab Franc, with sweet spice, ripe red berry and black pepper, and eighteen months in oak add a quiet coffee-and-vanilla layer. Ripening is slowed for this high-elevation Judean fruit, so it comes across as ripe and never jammy. It is full-bodied and has the fine-grained tannin that well-grown Cab Franc gives, and it finishes composed and peppery. Give it thirty minutes in a decanter, then serve it with serious food at cool room temperature.

Tasting notes

Sweet spice and ripe red berry, with coffee, black pepper and vanilla. Full in body, with a peppery lift, a ripe fruit core and fine-grained tannin. Composed, peppery and long.

Food pairing

Lamb chops, T-bone steak, slow-braised brisket, a Yom Tov seudah, or aged hard cheese (after the wait).
