Hevron Heights Eden Quintessence Ice Wine (500ml)

This is a true ice wine from Israel. A blend of 70% Semillon, 20% Sauvignon Blanc, and 10% Riesling is frozen and the ice is pressed out, and the concentrated juice then ages 36 months in French oak. It is rare and sweet, and built for the dessert course.

Mood: Luminous, golden, patient.

Tasting notes

Apricot preserve, honeyed pear, candied orange, and dried apple on the nose. It is silky and concentrated, with layers of stone fruit syrup and beeswax and a lifted citrus acidity. The finish is very long, sweet but never cloying, and closes clean on honey and citrus.

Food pairing

For foie gras, a blue cheese plate, apple tart, or the seder dessert that merits a glass of its own.
