The Drappier family runs its Champagne house from Urville in the Aube, where Pinot Noir is the majority on its chalky slopes. Its Brut Nature is bottled with zero dosage, so the fruit and terroir speak without the veil of added sugar.

Tasting notes
The nose shows green apple, lemon zest, and brioche, with a flint edge. Fine, insistent bubbles and Aube chalk minerality drive bracing citrus and orchard fruit. It is bone dry, saline, and long, and there is no sugar to soften the mineral bite.
Food pairing
A perfect match for oysters, cured salmon, or a plate of sushi on Yom Tov.
