Dalton's Alma Crimson - the Upper Galilee flagship, a Cabernet-led blend with Petit Verdot and Petite Sirah, built for the cellar.
Mood: The serious Galilee red. The guest who already knows Dalton and asks for the top of the range. The Yom Tov first night.
Our sommelier says
Deep ruby-purple. The nose is dense and layered - blackcurrant, black cherry, cedar, dark chocolate, a wisp of dried herb and black pepper from the Petite Sirah component. Cabernet Sauvignon leads on the structural spine, Petit Verdot adds the leafy graphite and dark color, Petite Sirah brings the peppery mid-palate weight. Full-bodied, finely tannic, French oak fully absorbed. Long, layered, age-worthy finish. Decant an hour; built to hold five-plus years.
Tasting notes
Blackcurrant, black cherry, cedar, dark chocolate, dried herb, black pepper. Full body, fine structured tannin, dense mid-palate, oak-integrated. Long, layered, peppery echo, age-worthy.
Food pairing
