Alma Crimson is the Upper Galilee flagship from Dalton. The blend is led by Cabernet, with Petit Verdot and Petite Sirah, and it is built for the cellar.
Mood: The serious Galilee red. The guest who already knows Dalton and asks for the top of the range. The Yom Tov first night.
Our sommelier says
The color is deep ruby-purple. A dense, layered nose gives blackcurrant, black cherry, cedar, and dark chocolate, plus a wisp of dried herb and black pepper that comes from the Petite Sirah component. The structural spine is led by Cabernet Sauvignon, the leafy graphite and dark color come from Petit Verdot, and the peppery mid-palate weight is the work of Petite Sirah. It is full-bodied and finely tannic, and the French oak is fully absorbed. The finish is long, layered, and age-worthy. Give it an hour in a decanter. It is built to hold five-plus years.
Tasting notes
Black cherry, blackcurrant, dark chocolate, cedar, black pepper, dried herb. Full in body with a dense mid-palate, fine structured tannin, and integrated oak. Layered, long, and age-worthy, with a peppery echo.
Food pairing
Pour it at a Yom Tov seudah with standing rib roast, lamb shoulder, slow-braised short ribs, or aged hard cheese (after the wait).
