Covenant Blanc de Blancs (750ml)
- In stock
- Not Mevushal
- Kosher for Passover
From California, Covenant Blanc de Blancs is a sparkling wine of 100% Chardonnay, fermented with native yeast and given zero dosage. It is finely beaded and bone-dry, produced the same way as the most serious blanc de blancs in the world, only kosher. Jeff Morgan founded Covenant on the belief that kosher wines should come from exactly the same hand as the non-kosher versions, and in the sparkling category this bottle is the proof.
Mood: Elegant, dry, ceremonial.
Tasting Notes
The nose shows lemon peel, quince, pear, and green apple. On the palate it is clean and tangy, with the chalky finesse that Chardonnay carries when left alone. A persistent, fine mousse closes on stone and citrus.
Food Pairing
Pour it as the aperitif ahead of the first course, or alongside sushi, smoked salmon, hard cheeses, herbed roast chicken, or fried appetizers. It is a natural choice when a simcha calls for a serious toast.
