A Pessac-Leognan Grand Cru Classe de Graves from the historic Chateau Pape Clement, owned by Bernard Magrez and named for Pope Clement V who planted these vines in 1306. The kosher cuvee is a tiny, separately fermented production — Bordeaux royalty, properly hashgacha'd.
Mood: Graphite, smoke, ceremony.
Tasting notes
A powerful nose of ripe blackcurrant, plum, dark cherry, tilled earth, espresso, and a thread of sweet tobacco. The palate is opulent and muscular — cassis, violets, vanilla, toast — framed by gripping, fine-grained tannin. Finish is long and mineral, with cocoa and graphite lingering well past the last sip.
Food pairing
A wine for a Yom Tov crown roast, dry-aged steak at a milestone simcha, or a slow-braised brisket worthy of the bottle. Decant a full hour before serving.
