This is Adir's flagship Cabernet Sauvignon, grown in the high-elevation Kerem Ben Zimra vineyards of the Upper Galilee. It is a serious dry red, and it shows why Adir ranks among Israel's most respected boutique wineries.
Mood: Deep, layered, confident.
Cool-climate Israeli Cabernet by the textbook, with ripe black fruit, real structure, and enough oak framing to reward the good glassware.
Tasting Notes
Cedar, clove and a whisper of cocoa meet dark plum, black currant and blueberry. The wine is full-bodied and firmly structured, its layered black fruit lifted by fresh acidity and by tannins that are grippy but polished. The finish is long and warming, and dark chocolate and toasted oak trail behind the fruit.
Food Pairing
It is a natural with Shabbos brisket, standing rib roast, grilled lamb chops, cholent and aged hard cheeses.
