Konditon is the ancient spiced honey wine of the Talmud, reborn by the Shor family at Hacormim. Late-harvest grapes are macerated with date honey and Jerusalem mountain herbs, then rested twelve months in French oak.

Mood: Ancient, spiced, contemplative.

Sommelier's Note

“A Talmudic wine in modern form — drink it the night of Pesach next to the brisket and feel two thousand years of Jewish kitchen folded into the glass.”

Tasting Notes

The nose opens on date honey, dried fig, and warm cinnamon with a curl of clove and crushed mountain herbs. The palate is plush and sweet without weight, layered with raisin, prune, candied citrus peel, and a faint medicinal bitterness that keeps everything in balance. The finish is long and warming, lingering on baked fig and oak-sweet spice.

Food Pairing

Pour at Seder for the four cups, alongside honey cake at Rosh Hashanah, or with a wedge of aged cheese after a long Shabbos meal. Equally good neat after dessert.
